Tuesday, 23rd January-Simple veg and nut stir fry
Simple weekday vegetable and nut stir fry
Serves 3 – 4
350g egg noodles (or rice noodles)
1 tablespoon rapeseed oil (or olive oil)
handful of button mushrooms, quatered
1 red pepper, sliced
1 yellow pepper, sliced
1 red onion, thinly sliced
2 handfuls of fresh spinach or pak choi
2 garlic cloves, thinly sliced
1 thumb sized piece of fresh ginger, grated
1/2 red chilli, sliced very thinly
4 – 5 tablespoons low salt soy sauce or tamarin
200g sweet and salty cashews (see recipe below)
Method
Boil the egg noodles according to packet instructions
Drain using a colander and leave to cool.
Meanwhile, fry the onion, mushrooms, peppers, garlic, ginger and chilli with the rapeseed oil for 5 minutes.
Add the noodles to warm along with the spinach and soy sauce. Give it a few more minutes. The vegetables should stay fairly crunchy.
Add the sweet and salty cashews and serve immediately.

22nd January and we have already completed day one of our new programme which is the SECOND new programme of the year. It went down big and thanks for coping with it.
A lot of terrifically hard exercises, but your standards are high and you got through it. Every exercise has a reason for it, and you will become better athletes because of it.
Day 2 is going to be tough again tomorrow and will challenge you in a totally different way.
You will feel better after it, those you who took the Chinese and bottle of wine option instead will feel the exact opposite of those who went through the programme today.
Set your standards high, believe in the new brain cells that exercise gives you, and accept the higher state of consciousness you will now have after working out so hard.
Life is a series of choices, on the settee with a bottle of wine on a Monday or having crazy feel good chemicals flying around your body that lead to a great night sleep.
